Egg & Cheese Sandwich w/ Spinach & Hashbrowns


I woke up hungry for a breakfast burrito, but in a pinch this will do just fine.  Egg, cheese and potato is the ultimate sponge for soaking up any combination of condiments.  I like to mix ketchup and rooster sauce together to pour on top.   

Ingredients:

Texas toast
2 Eggs 
loose Spinach (pull off stems)
any kind of cheese
Hashbrown cake ($1.99 for 10 at Trader Joe's)
Butter

Preparation:

In a small pan, stir the spinach around in a little bit of melted butter until it gets soggy, then add the pre-stirred eggs in and reduce heat to low.  When most of the egg is cooked, add cheese and fold over to make a mini omelet.  You can do this while toasting the toast and microwaving - or toasting - the hashbrown cake.  Add them all together and put your favorite condiments on top.  Cooking time is about 7 minutes.
