The other day when I made ketchup fried rice I didn't have any onions to put in it. I was lamenting this fact and thinking about how good onions and ketchup taste together in general when the rare lightbulb went on upstairs and showed me the way to this wholly original culinary creation. Actually, I later found someone beat me to it, and they have a youtube video to prove it. Still, I was inspired to have thought it up at the time. I'm sure someone can tweak this recipe and make it even more amazing and cheeseburger-like at some point, but here's a good starter:
Ingredients:
2 Cups Jasmine rice
2 eggs
1 Cup frozen peas
1 white onion, chopped into large pieces
1/2 pound ground beef
1 1/2 - 2 Cups shredded cheddar cheese
1/2 iceberg lettuce head, chopped
1 large tomato, sliced and quartered
2 hamburger buns, top and bottom
Ketchup
Squeezable mayonnaise
Cooking oil
Directions:
Cook jasmine rice in rice cooker, let cool while prepping other ingredients. Heat the oil up a bit before adding onion. Stir occasionally on medium heat for about 10 minutes until onion is soft and browned. Add hamburger meat and frozen peas. Cook until meat is browned, lower heat, and create a space on one side of the pan to fry eggs. Mix eggs in after stirring about 30 seconds, then begin adding rice about a cup at a time while stirring. After rice is added, pour ketchup on top and mix in until taste is to your liking. Add salt and pepper if desired.
Toast hamburger buns until crispy, then break into crouton-sized pieces. Shred cheddar cheese. Put stir-fry on plate or into bowl, add shredded cheese, mayonnaise if you like it, chopped lettuce, sliced tomato and croutons. I like to add sriracha. Enjoy!
