Ingredients:
3/4 pound ground turkey
1 cup Italian bread crumbs
1 egg
1/2 cup parmesan cheese
1/2 cup pecorino cheese
1/2 yellow onion cut into rings
1 tablespoon pre-cooked, minced garlic
1 - 2 cups spaghetti sauce or marinara
1 1/2 cups shredded mozzarella
1/2 can black olives, sliced
1/2 tablespoon butter
1 loaf of wide french bread, sliced into sandwich lengths
cooking oil
Directions:
Butter bread, season with garlic salt and set aside.
Preheat oven to 375 degrees. Add all meatball ingredients in a bowl and mix with hands until well blended. Shape into whatever size meatball you would like. Heat 1 tablespoon of oil and fry meatballs until well browned. Take meatballs out and set aside. Add onion to pan and fry until brown. I added a little bit of whiskey to mine and let them caramelize a bit.
Heat spaghetti sauce in small saucepan. Flatten both sides of bread to fit contents. Layer meatballs, black olives and onion on bread, top with spaghetti sauce and mozzarella cheese. Cook open faced in oven for 15 - 20 minutes or until cheese is lightly brown on top, along with fries if you want them. Enjoy!
